Healthy Comfort Food: Creamy Chicken, Cheese, & Broccoli Casserole


This time of year I'm alllll about the comfort food y'all. Pasta, casseroles....anything with heaps of cheese or butter...or both! Throw in a glass of wine and I'm pretty much doing the happy Winnie the Pooh dance haha.


I love finding legit healthy comfort food recipes and this one is a true winner. It's got that "taste of home" vibe, like something our parents or grandparents made for us growing up. I've made it a few times and have made some modifications I think you'll enjoy!

No fancy test kitchens and professional photographers here! Just a mom trying to put some food on the table that tastes good and won't result in having to buy all new jeans ;D And that is ready before her toddler gets milk and crayons all over everything in sight!


Creamy Chicken, Cheese, & Broccoli Casserole

Ready in under 30 minutes.

Serves 4 easily, or will yield plenty of leftovers for smaller families.

ingredients:

  • Rotisserie chicken, skin removed and chopped (I use all breast meat)

  • 1 bag steam-in-bag broccoli florets

  • 1 small/medium yellow onion, chopped

  • 1 8 oz package sliced mushrooms

  • 1 TBLS canola oil

  • 3 TBLS all-purpose flour

  • 3/4 C milk (I use whole milk bc that's what I have, skim milk works, too)

  • 3/4 C low-sodium chicken broth

  • Sherry Cooking Wine (I use a splash)

  • 1/2 C plain fat-free Greek yogurt

  • 1/4 C mayonnaise

  • Salt and pepper

  • Sharp cheddar cheese

  • Grated Parmesan Cheese (about 1/4 C)

  • Breadcrumbs (fine, original or seasoned)

method:

  1. Preheat broiler.

  2. Steam broccoli in microwave according to package directions.

  3. Heat 12" ovenproof skillet over medium-high heat. Add canola oil, swirl to coat. Add onion and mushrooms, cook for around 10 minutes or until mushrooms start to brown. Stir occasionally.

  4. Add flour and cook for one minute, stirring constantly.

  5. Stir in milk and chicken broth, then add a splash of the sherry cooking wine. Bring to a boil and let cook for about 3 minutes, until mixture thickens and is bubbly.

  6. Fold in broccoli and chicken, cook one minute.

  7. Remove pan from heat.

  8. Add yogurt, mayonnaise, salt, and pepper.

  9. Top with Parmesan, then cover with cheddar cheese and add fine layer of breadcrumbs last.*

*To make healthier, limit cheddar cheese to 1/2-3/4 C and skip breadcrumbs.
